MONDAY MUNCHIES: Banana-Cinnamon Waffles

Back on the breakfast wagon again! I just love breakfast and waffles are a sure win for breakfast any day of the week!

Banana-Cinnamon Waffles

1 cup all-purpose flour
1/2 cup whole wheat flour
1/4 cup buckwheat flour
1/4 cup ground flaxseed
2 tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups fat-free milk
3 tablespoons butter, melted
2 large eggs, lightly beaten
1 large ripe banana, mashed
Cooking spray

1. Lightly spoon flours into dry measuring cups; level with a knife. Combine flours, flaxseed, and next 4 ingredients (through salt) in a medium bowl, stirring with a whisk.

2. Combine milk, butter, and eggs, stirring with a whisk; add milk mixture to flour mixture, stirring until blended. Fold in mashed banana.

3. Preheat a waffle iron. Coat iron with cooking spray. Spoon about 1/4 cup batter per 4-inch waffle onto hot waffle iron, spreading batter to edges. Cook 3 to 4 minutes or until steaming stops; repeat procedure with remaining batter.

4. Top these lightly spiced waffles with cinnamon sugar, sliced bananas, and/or a drizzle of maple syrup

MONDAY MUNCHIES: Microwave Snack Mix

The majority of my show season = me in a booth for more than 8 with no access to food except what I bring. The food I bring must be easy to eat & not to messy so I dont 1. end up getting on the product and 2. don't end up with it on my face while talking to people. Here is a quick snack mix recipe that should fit the bill for any future outing!

Microwave Snack Mix

2 (1-oz.) envelopes Ranch dressing mix
1/2 cup vegetable oil
3 cups crisp oatmeal cereal squares
3 cups corn-and-rice cereal
3 cups crisp wheat cereal squares
2 cups pretzel sticks
1 cup dried cherries
1 cup candy-coated chocolate pieces

1. Whisk together Ranch dressing mix and 1/2 cup vegetable oil in a large microwave-safe glass bowl. Stir in oatmeal cereal squares and next 3 ingredients.

2. Microwave mixture at HIGH 2 minutes, and stir well. Microwave at HIGH 2 more minutes, and stir well. Spread mixture in a single layer on wax paper, and let cool 30 minutes. Add cherries and candy pieces. Store in an airtight container up to 5 days.

MONDAY MUNCHIES: Chocolate Hazelnut Ice Cream Sandwiches

I know I just did a sweet treat a few weeks ago but I just thought these sounded too good not to feature this. Especially since it is almost the end of summer!

Chocolate Hazelnut Ice Cream Sandwiches

16 chocolate wafers (such as Nabisco Famous Chocolate Wafers)
1/3
cup chocolate hazelnut spread, (such as Nutella)
1
pint premium chocolate ice cream
1/3
cup cup chopped toasted hazelnuts

1. Spread flat side of each wafer with hazelnut spread; set aside. Scoop 8 ice cream balls, about 3 tablespoons each; keep in freezer until ready to assemble.

2. To assemble sandwiches, remove ice cream balls from freezer; let stand 1 minute to soften. Place 1 cream ball on 8 hazelnut-spread wafers. Top with remaining wafers; press gently together.

3. Sprinkle edges with nuts. Place sandwiches on baking sheet lined with waxed paper; freeze 3 hours or until firm. To store, freeze up to two weeks in self-sealing plastic bags. Makes 8 sandwiches.

MONDAY MUNCHIES: Sparkling Cranberry Rose

It has been a while since I shared a drink recipe so I thought it was time for one! This recipe is a mix of sweet & tangy and best of all you can have a little "punch" or not - your choice!

Sparkling Cranberry Rose

8 to 10 sugar cubes
1
to 1-1/4 cups cranberry juice
1
750-milliliter bottle sparkling rosé wine, champagne, or sparkling white grape juice
Fresh cranberries (optional)

1. Place one sugar cube in the bottom of 8 to 10 chilled champagne flutes or other tall, narrow glasses. Pour 2 tablespoons cranberry juice into each glass.

2. Fill each glass with sparkling rose wine or champagne. If desired, place a wooden skewer of fresh cranberries in each glass. Makes 8 to 10 servings.

MONDAY MUNCHIES: Coconut Cupcakes

My husband and I generally have the same taste in food however, coconut is one thing we dont share a strong love for! I adore coconut so when I ran across this great recipe I just had to share!

Coconut Cupcakes

2 3/4 cups butter, at room temperature
2 cups granulated sugar
4 large eggs
2 teaspoons each vanilla and almond extracts
3 cups all-purpose flour
1/2 teaspoon each baking powder, baking soda, and salt
1 cup coconut milk
1 1/2 cups flaked coconut, plain or toasted
8 ounces cream cheese, at room temperature
2 3/4 cups powdered sugar

1. Preheat oven to 350°. In a large bowl, cream together 2 cups butter and granulated sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Mix in 1 1/2 teaspoons each vanilla and almond extracts.

2. In another large bowl, combine flour, baking powder, baking soda, and salt. Add to butter and sugar mixture in 3 batches, alternating with coconut milk. Stir 1 cup flaked coconut into the batter.

3. Fill 30 paper-lined muffin cups (1/2-cup capacity) in two or more muffin pans about 2/3 full with batter. Bake until a toothpick inserted into the center of a cupcake comes out clean, 15 to 20 minutes. Cool for 10 minutes before removing muffins from pans. Cool completely.

4. Meanwhile, in a medium bowl, beat cream cheese, 3/4 cup butter, and 1/2 teaspoon each vanilla and almond extract until smooth. Gradually beat in powdered sugar. Frost cupcakes and sprinkle with remaining coconut.
