Beyond their loveliness is the fact that I actually got a really great photo with props and everything - yeah! They were also featured on the lovely Oh So Beautiful Paper blog just recently. MONDAY MUNCHIES: Sizzling Fajitas

Just felt like a little sizzle this week and found this great recipe for super easy Fajitas. Ready in less than 20 minutes and super yummy!

Sizzling Fajitas

2 tablespoons vegetable oil
4 skinless, boneless chicken breast halves OR
1 beef sirloin steak (about 1 pound), cut into strips
1 medium green or red pepper, cut into 2-inch-long strips (about 1 1/2 cups)
1 medium onion, sliced (about 1/2 cup)
1 1/2 cups Pace® Picante Sauce
8 (8-inch) flour tortillas, warmed
Guacamole

1. Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken or steak and cook until well browned, stirring often.

2. Stir the pepper and onion in the skillet and cook until they're tender-crisp. Stir the picante sauce in the skillet and cook until the mixture is hot and bubbling.

3. Spoon about 1/2 cup mixture down the center of each tortilla. Top with additional picante sauce. Fold the tortillas around the filling. Serve with the guacamole, if desired.

Screenprinting - New for Market Day

So I shared with you my first day of screenprinting a few weeks ago and since then I have been going strong! This is just two quick shots of what I have been working on for my next show which is here in Des Moines Saturday July 31, 2010. FRIDAY FEATURE: Seeing Red

I just love the color red but I dont find myself printing with it too much. I think it is because that color is particularly difficult for me to clean up - it seems to get everywhere. This week features the color red toned down a bit with natural browns.

MONDAY MUNCHIES: Apple Butter Hotcakes

Yes, I still seem to be on quite a breakfast kick so this week we are exploring that just a little further. I love pancakes and love them even more with specialty toppings so this week we make our own cherry sauce - fun!

Apple Butter Hotcakes
1/2 cup butter, softened
1/4
cup honey
1/4
teaspoon ground cinnamon
1
12-ounce package frozen pitted light or dark sweet cherries
1/2
cup cherry jam or cherry preserves
1
teaspoon finely shredded orange peel
1-1/2
cups packaged regular or buttermilk pancake mix (not complete pancake mix)
3/4
cup milk
2
tablespoons cooking oil
2
eggs, lightly beaten
1/2
cup purchased apple butter

1. For flavored butter, in a small mixing bowl, use a small whisk to combine butter, honey, and cinnamon. Whisk until well combined; set aside.

2. For cherry sauce, in a medium saucepan, combine frozen cherries, cherry jam, and orange peel. Bring to boiling over medium heat, stirring frequently; reduce heat. Simmer, uncovered, for 10 minutes or until sauce has thickened slightly. Cover and set aside; keep warm.

3. In a medium bowl, stir together pancake mix, milk, oil, eggs, and apple butter. Stir just until moistened (batter should still be lumpy). For mini-size hot cakes, spread about 1 tablespoon batter into a 1-1/2-inch circle onto a hot lightly greased griddle or heavy skillet. (For standard-size hot cakes, spread about 1/4 cup batter into a 4-inch circle.) Cook over medium heat about 2 minutes on each side or until hot cakes are golden brown, turning to second sides when hot cakes have bubbly surfaces and edges are slightly dry. Serve warm with flavored butter and cherry sauce.

Screenprinting - DAY ONE

Well, my first day of sceen-printing went very well - yeah! The emulsion/exposure is the most difficult part - it did take me three tries to get that done imperfectly but workable. The next one should be much easier. Here is the image of the completed screen:

Today I printed on a tea-towel just for practice and pulled two prints. The first one came out PERFECT! The second one, not-so-much. The process is that one must flood the screen - then print and then repeat. Well, I didn't realize that I needed to flood the screen prior to each print so my second print was way too light with not enough coverage. Then when I realized I needed to do that, I went ahead and did it but then the ink was too thick.

Anyway, here are a couple of pulls - the first good one

and the sucky second - ink too thick.

It was a great day of learning for me. It will take a bit of learning but it was really fun! I will keep you posted on my progess.

MONDAY MUNCHIES: Strawberry Dessert Cake

This week I found this amazing dessert that is also low-fat - how much more amazing can you get? This yummy slice of heaven is less than 300 CAL & only 2 GR fat per serving!

Strawberry Dessert Cake

1 Angel Food cake mix
Raspberry Extract
Liquid red food color
2/3 cup strawberry topping
3 cups slightly softened lowfat strawberry ice cream or frozen yogurt
2 cups thawed lite whipped topping or lightly sweetened whipping cream
Fresh strawberries or raspberries

1. Prepare the Classic Angel Food Cake recipe with these changes: Line the bottom of a 9 x 3-in. springform pan with nonstick foil, then attach the sides of the pan. Substitute raspberry extract for the vanilla in Step 3, and add 3 drops liquid red food color with the extract. Spread in prepared pan and bake as directed.

2. Cool the cake completely, in pan, upside down on a wire rack. To loosen cake, run a thin-bladed knife around sides of pan; remove pan sides. Invert cake and remove pan bottom.

3. Using a serrated knife, cut cake into 2 layers. Place bottom layer, cut side up, on pan bottom and spread with 1⁄3 cup strawberry topping. Spoon 3 cups slightly softened lowfat strawberry ice cream or frozen yogurt over topping. Spread another 1⁄3 cup strawberry topping over ice cream. Top with remaining cake layer, cut side down.

4. Freeze at least 4 hours or overnight. (Once the cake is frozen, it can be wrapped and stored in freezer up to 2 weeks.)

5. To serve: Transfer frozen cake to a serving plate. Frost with 2 cups thawed lite whipped topping or lightly sweetened whipped cream. Decorate with strawberries or raspberries. Refrigerate 30 minutes to soften slightly before serving.
