WEDNEDAY WANTS: Doily Coasters

I fell in love with these the instant that I had seen them! I know it sounds crazy to love a coaster but the coasters I tend to find are either made out of shoddy paper or glass which lets the water seep down the side and they are never pretty. This is a set I would actually love having on my end table. There is a fantastic clock in this style as well - visit the shop to see more lovely goods!

MONDAY MUNCHIES: Sausage & Cheese Breakfast Casserole

You are going to laugh but I have been a bit stuck on breakfast lately. I eat it for any of the three meals in the day - I just love breakfast food! This weekend I ran across this fantastic breakfast casserole recipe that believe it or not is UNDER 300 Calories per serving which makes it even more wonderful!

Sausage & Cheese Breakfast Casserole

Cooking spray
12 ounces turkey breakfast sausage
2 cups 1% low-fat milk
2 cups egg substitute
1 teaspoon dry mustard
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground red pepper
3 large eggs
16 (1-ounce) slices white bread
1 cup (4 ounces) finely shredded reduced-fat extrasharp cheddar cheese
1/4 teaspoon paprika

1. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add sausage to pan; cook 5 minutes or until browned, stirring and breaking sausage to crumble. Remove from heat; cool.

2. Combine milk and next 6 ingredients (through eggs) in a large bowl, stirring with a whisk.

3. Trim crusts from bread. Cut bread into 1-inch cubes. Add bread cubes, sausage, and cheddar cheese to milk mixture, stirring to combine. Pour bread mixture into a 13 x 9–inch baking or 3-quart casserole dish coated with cooking spray, spreading egg mixture evenly in baking dish. Cover and refrigerate 8 hours or overnight.

4. Preheat oven to 350°.

5. Remove casserole from refrigerator; let stand 30 minutes. Sprinkle casserole evenly with paprika. Bake at 350° for 45 minutes or until set and lightly browned. Let stand 10 minutes.

MONDAY MUNCHIES: Corn & Cheddar Cornbread

This weeks recipe is one of my husbands favorite foods. It can easily be paired with any summer picnic meal choice. This recipe has a bit of a twist adding corn & cheddar.

Corn & Cheddar Cornbread

2 boxes (8 1⁄2 oz each) corn muffin mix
1 can (11 oz) vacuum-packed Mexican-style corn
2⁄3 cup milk
2 large eggs
2 Tbsp stick butter, melted
1 cup (4 oz) shredded Cheddar cheese
Scallion Butter
1 stick (1/2 cup) softened butter
2 Tbsp minced scallions and, if desired
1/4 tsp hot pepper sauce

1. Heat oven to 375°F. Lightly coat a 9-in. round cake pan with nonstick spray.

2. Stir first 5 ingredients in a bowl until blended; fold in cheese. Scrape mixture into prepared pan.

3. Bake 30 to 35 minutes until golden brown.

4. Cool in pan on a wire rack. Cut in wedges. Serve with Scallion Butter.
Scallion Butter: Mix 1 stick (1/2 cup) softened butter with 2 Tbsp minced scallions
and, if desired, 1/4 tsp hot pepper sauce.

Art/Craft GARAGE SALE - Des Moines, IA

For those of you who know me - you know that my path to art/printmaking has lead me through many areas of arts/crafts. I have tried everything from collage to polymer clay. Now that I am settled into the art of drawing/painting/printmaking - I really don't have time for any other art/craft. My entire basement is filled with many treasures and supplies that I am now ready to part with. For those of you in Des Moines - I am having a HUGE supply garage sale this weekend. Even if you are a little further away - believe me - it would be worth the trip. If you are looking for something very specific - you are welcome to email me to see what I have. MONDAY MUNCHIES: Lemonade Cupcakes

The cupcake seems to be very "in" right now and I couldn't agree more with this fad! Each individual cupcake is like a tiny little cake - just for me! This week I was looking for something fresh and summery as we are finally getting into the summer season.

Lemonade Cooler Cupcakes

1 box (18.25 ounces) Lemon Cake Mix
1 can (16 ounces) Lemon Supreme frosting
4 drops yellow food coloring
8 pieces green gum sticks, spearmint gum
8 small lemon candy slices
4 green straws cut in half crosswise (optional)

1. Preheat the oven to 350°F.

2. Line 24 muffin cups with 2 yellow paper liners in each cup. Prepare the cake mix according to package directions. Divide the batter evenly between the prepared pans. Bake until cupcakes are lightly golden and a toothpick inserted in center comes out clean, 18 to 21 minutes. Transfer the cupcakes to a wire rack and cool completely.

Tint the lemon frosting a brighter yellow with the food coloring – stir to blend well. Spread the frosting on top of all of the cupcakes and make smooth, making sure to keep the double paper liners in place.

4.
Use a pair of craft scissors (or regular scissors) to cut the gum slices into 16 leaf shapes. Pinch one narrow end to make the leaves. Press a lemon slice, 2 leaves and a straw on top of 8 of the cupcakes.

5. Arrange a tower of 3 cupcakes stacked on top of each other, ending in a cupcake with the straw to create the glass. (If traveling with the cupcakes do not assemble until you are at the location.) Press the cupcakes into the frosting to secure.
