FEATURE: You Compliment Me

So I decided to create one for my Friday Feature since I will not only be able to feature more art but also the process of creation is much easier than cropping every image in photoshop myself!

Letterpress Printing Process - THE SWAN

Before printing my newest print I thought that I might track my progress for those of you who may not have had any experience with letterpress printing. The reason letterpress pricing may seem expensive is because it is a lengthy process and the supplies can be quite expensive if your printer is using high quality materials - not to mention the cost of a 700-2000LB press! Anyway, this print is called the Swan and it is a 3-Color job/4-Color pass using polymer plates on a Vandercook Cylinder Press.

PS - this is my first try at photographing my process so bare with me!

Well, I skipped plate 3 and went on to photo plate 4 which is gravel as well but it is the small line of type that had to be printed separately as tiny type needs much less ink on the press than the think line art.

MONDAY MUNCHIES: Chocolate Peanut Butter Cupcakes

I have to admit that peanut butter is by far one of my favorites! I love it as a flavor, as a topping, in a sandwich - whatever! This week I ran across this easy recipe for chocolate cupcakes with real peanut butter FROSTING - these are really fantastic!

Chocolate Peanut Butter Cupcakes

1 pkg Swiss Chocolate Cake Mix
1 tub Vanilla Frosting
1/2 cup creamy peanut butter
15 miniature peanut butter cup candies, halved


1. Preheat oven to 350°F. Place 30 paper baking cups in muffin cups.


2. Prepare, bake and cool cupcakes according to package directions.


3. Combine frosting and peanut butter in medium bowl. Stir until smooth. Frost one cupcake. Decorate with peanut butter cup candy, cut-side down. Repeat with remaining cupcakes and candies.

MONDAY MUNCHIES: Baked Egg Rolls

For those of us making an effort to eat a bit more healthy - fried foods are generally the first to go. This can be a dilemma when your favorite Chinese dish would be so much more enjoyable with that yummy eggroll on the side! If this sounds like you - problem solved!

Baked Egg Rolls

1-1/3 cups chopped fresh broccoli stir-fry vegetable blend
1 cup shredded cooked chicken breast
4-1/2 teaspoons reduced-sodium soy sauce
2 teaspoons sesame oil
2 garlic cloves, minced
1/2 teaspoon ground ginger
8 egg roll wrappers

1. In a small bowl, combine the first six ingredients. Place 1/4 cup chicken mixture in the center of one egg roll wrapper. Fold bottom corner over filling; fold sides toward center. Moisten remaining corner with water; roll up tightly to seal. Repeat with remaining wrappers and filling.

2. Place seam side down on a baking sheet coated with cooking spray. Spray tops of egg rolls with cooking spray. Bake at 425° for 10-15 minutes or until lightly browned. Serve warm. Refrigerate leftovers. Yield: 8 egg rolls.

MONDAY MUNCHIES: Pineapple Cooler

Ready for something fun & fruity to serve at your spring get together? This Pineapple cooler is your answer! Finding fun drink recipes can sometimes be a chore. This week I choose a non-alcoholic but I am sure if you wanted to - you could find a way to spice it up! Enjoy!

Pineapple Cooler

1 12-ounce can frozen pineapple juice concentrate, thawed
1
6-ounce can frozen limeade concentrate, thawed
4
cups cold water
1
liter club soda, chilled
Ice cubes
Fresh strawberries (optional)
Short (6-inch) wooden skewers
Assorted fruits such as halved orange slices, halved lime slices, orange sections, raspberries, strawberries, sliced kiwifruit, and mint sprigs

1. In a large pitcher combine pineapple juice concentrate, limeade & water.

2. Chill for at least 30 minutes.

3. To serve, transfer fruit juice mixture to pitchers; add club soda, ice cubes, and fresh strawberries. Serve with Fruit Swizzle Sticks, if desired. Makes 14 (6-ounce) servings.

Fruit Swizzle Sticks: On short (6-inch) wooden skewers, thread assorted fruits and mint sprigs.

Make-Ahead Tip: Up to 24 hours ahead, prepare the juice mixture and chill well. Proceed as directed.

MONDAY MUNCHIES: Coconut Cream Cake

Our mini-vacation to Galena was so much fun! There were so many things to see and eat there - this was definitely a yummy trip! Since my sweet tooth hasn't seemed to subside I figured I would do another sweet Monday Munchies this week! Hope you like coconut!

Coconut Cream Cake

CAKE
1 pkg white cake mix
1 (3.4 oz) pkg coconut cream instant pudding and pie filling
4 large eggs
1 cup water
1/3 cup vegetable oil
1/3 cup flaked coconut

FROSTING
1 can vanilla frosting
1 1/3 cups flaked coconut


1. Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.

2. For cake, combine cake mix, pudding mix, eggs, water and oil in large bowl. Beat at low speed with electric mixer until moistened. Beat at medium speed for 2 minutes. Stir in 1/3 cup coconut. Divide into pans.


3. Bake at 350°F for 32 to 37 minutes or until toothpick inserted in center comes out clean. Cool following package directions.


4. Fill and frost cake. Sprinkle with remaining coconut. Refrigerate until ready to serve.
